I was having some delicious salmon and mixed greens and wanted to spice up my quinoa.  I got the idea from the Martha Stewart cauliflower recipe.  It was delicious.  Here is the recipe:

1 cup quinoa

2 cups of water 

1 tablespoon of olive oil

1 tsp curry powder (or hot curry powder if you like spicy)

1 tsp cumin seeds

1 tsp mustard seeds

1/2 tsp crushed red pepper flakes (optional)

1/2 tsp sea salt (more or less depending on your love of salt)

 

Bring quinoa and water to a boil

Turn down to a simmer and add olive oil, and all of the spices.  Simmer for 15 minutes covered or until quinoa is fluffy.
